Ingredients
2 tablespoons sweet white miso
2 tablespoons unsalted butter, softened
1 teaspoon maple syrup
1 3/4 -2 pounds turnips, peeled if desired, cut into 2- inch pieces
1 cup low-sodium no-chicken or chicken brothÂ
4-5 cups roughly chopped turnip greens or adult spinach, tough stems removedÂ
1/4 teaspoon ground black pepper
Preparation
Combine miso, butter and maple syrup in a small bowl until well combined. Set aside.
Combine turnips and broth in a large skillet and bring to a boil over medium-high heat. Reduce heat to a simmer, cover and cook, stirring occasionally, until the turnips are just softened, 10-15 minutes. Add turnips greens (or spinach), return to a simmer and cook, uncovered until the greens are wilted and the liquid had reduced slightly, about 5 minutes. Add miso-butter mixture and cook, stirring occasionally until the liquid had thickened and coats the turnips; 3-5 minutes more. Garnish with ground pepper.
