Ingredients
2 cups all-purpose flour
¼ tsp. kosher salt
1 cup (2 sticks) unsalted butter, softened
¾ cup confectioners’ sugar
1-2 tsp. citrus zest, such as lemon, lime, orange or grapefruit
1 tsp. lemon juice
1 tsp. chopped herbs, such as rosemary, thyme or sage
Sanding sugar (optional)
Preparation
Preheat oven to 300°F. Butter a 9-inch-square baking dish.
Whisk flour and salt in a medium bowl. Mix butter in a stand mixer on high speed until fluffy, about 3 minutes. Add sugar and mix for 2 to 3 minutes more. Add zest, lemon juice and herbs and mix on low for 30 seconds. Add the flour mixture and mix until just combined, scraping the sides as needed.
Press the dough into the prepared pan to about ½ inch thick. Refrigerate for 30 minutes or overnight.
Cut into 20 bars. Sprinkle with sanding sugar, if desired. Bake until golden and firm in the middle, about 1 hour.
Cool in the pan for about 1 hour. Reslice if necessary.
